Vegan chocolate cake
with ganache
ALL THE FLAVOR WITH A VEGAN TWIST
Cake Ingredients:
- 2 cups flour
- 1 1/2 cup coconut sugar
- 1/4 cup cocoa powder
- 2 table spoon apple cider vinegar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup avocado oil
- 8 oz unsweetened baking chocolate
- 1/2 cup almond milk
- 1 teaspoon pure vanilla extract (careful, not all extracts are pure)
Preheat oven to 350. Combine all ingredients except chocolate, and mix until well blended. Melt chocolate in microwave for one minute, in 30 second increments – just until it is melted, not boiling. Add chocolate to ingredients and mix thoroughly.
Divide mixture evenly into two 8 inch pre-greased pans. (We recommend coconut oil.) Bake for 20 minutes or until a toothpick can be inserted and removed cleanly.
Set cakes aside to cool.
Ganache Ingredients
- 8 oz unsweetened baking chocolate
- 7 oz canned organic coconut milk (must be canned for that oh-so-creamy texture!)
- 3/4 cup organic powdered sugar
Combine all ingredients in sauce pan and heat over low to medium setting on stove-top, whisking entire time, until ganache is thick like gravy.
Drizzle the ganache over the first cake layer. Place second cake layer on top of the first layer and drizzle ganache over the top layer.
Allow the ganache to cool before serving and enjoy.
